Chimichurri Chicken w/ Creamy Mushroom Pasta

Ingredients - Serves 4
- 1kg Skinless Chicken Thigh (Use Legs, Breast a Whole Chicken If You'd Like).
- 300g Spaghetti (Use Whatever Pasta You Want).
- 1 Large Onion or 5 Shallots - Finely Diced.
- 4 Large Garlic Cloves - Finely Diced.
- 100ml White Wine.
- 200ml Cream.
- 25g Butter.
Method
- Liberally Coat Your Chicken Thighs in Chimichurri herb Mix. Bake in Oven at 200c For 30mins. Leave to Stand For 5 Mins Once Cooked.
- Cook Pasta In Salted Water For 9mins.
- Fry Finely Diced Onion In Neutral Oil Until Soft, Add Garlic Fry Until Fragrant.
- Add White Wine To Onions & Reduce Until Little Remains.
- Add Mushrooms To Pan Cook Until Soft.
- Add Cream, Cook On Low For About 5 Mins.
Serving Suggestions
- Plate Up Pasta, Place Chicken On Top, Finish With Mushrooms & Cream On Top :D
